Baked Berry Oats

This nourishing breakfast is ideal to make on a Sunday and have ready to go for the week. Simply cut a slice and reheat.

Oats

Serves:

Ingredients

  • 2 cups fresh or frozen berries
  • 2/3 cup almonds, roasted & chopped
  • 2 cups rolled oats
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp nutmeg or mixed spice
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1 3/4 cups almond or cow’s milk
  • 2 tsp vanilla extract
  • 2 tbsp pure maple syrup or honey
  • 2 eggs

Method

  • Preheat oven to 180C. Grease a 20 x 30 cm baking dish.
  • Combine oats, nuts, cinnamon, ginger, nutmeg & salt in bowl and mix well.
  • In a smaller bowl combine milk, eggs, maple syrup & vanilla extract. Whisk to combine.
  • Lay the berries (you don’t need to defrost if frozen) evenly over base of baking tray.
  • Lay oat mix on top & then add milk mix.
  • Bake for 30-40 minutes.
  • To reheat, cut a slice and heat for 5-10 minutes in a 180C oven.

Serving suggestion: Add a dollop for Greek yoghurt for extra protein.
